Description
The bitter orange was introduced in Sicily by the Arabs during their domination; the sweet one, instead, arrived in Sicily from China only in the 16th century.
The fruits, of medium-large size (150-250 grams) have a navel at the lower end (navel) from which it takes its name.
The harvest begins in November and lasts until April. The fruit, seedless, has a medium texture, a very pleasant taste and very low acidity. In the kitchen it is used for the preparation of desserts and salads to be served as an appetizer or side dish for roasts. The dry or candied peel is used in confectionery.
ORANGE:
Navel orange plants are called Brazilian. In fact it has been demonstrated that this type of fruit arrived in Sicily directly from Brazil, where the Navel cultivar originated by natural mutation of the Selecta variety.
The Washington Navel orange is known by everyone, even if it is now well known that the microclimate of our territory enriches it with flavours and scents that make it very special.
The Vanilla Orange: the name contains the organoleptic qualities; the total absence of acidity (as well as seeds) that makes it perfectly tolerable even by many people who suffer from burns and gastric mucosa disorders.
The use of orange in gastronomy:
Particularly noteworthy (thanks to the very low degree of acidity, the absence of seeds and the aftertaste full of fruity flavours) are the dishes based on fish and shellfish: swordfish, shrimp, salmon, scampi just to name a few.
