The anchovy, also called alice (scientific name Engraulis encrasicolus), is a bony fish widespread throughout the Mediterranean. It is a pelagic species, which approaches the coasts only to reproduce (from June to November, depending on the area). It lives in schools and at varying depths. Anchovies have a short life cycle, rarely reaching 5 years. Luckily, they also have a high reproductive capacity and are thus able to survive the busy fishing. Similar to sardines, anchovies have a thinner, tapered body that reaches 15-20 cm in length.

The anchovy meat, both fresh and preserved, is particularly tasty and especially suitable for raw consumption, after marinating, and for frying.
Marinated anchovies, a variety of oily fish rich in omega 3, are used in the kitchen in a wide variety of recipes ranging from appetizers to first and second courses.

Anchovies are also an advisable food from a health point of view. Like all oily fish, anchovies are in fact rich in useful nutrients and have an extremely moderate energy content.
